Mango Bread Recipe

Delicious mango bread with vanilla lime glaze recipe is very easy to make, and so tasty! This is a sweet bread that can be enjoyed after breakfast or dinner, or as a snack with coffee or tea.

Caution, we have been told that this is very addictive and hard to stop eating!

Mango Bread Recipe

  • 2 cups Flour (Option: Gluten Free All Purpose Flour)
  • 2 tsp Aluminum Free Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Ground Cloves
  • 1 tsp Ground Ginger
  • 1/2 tsp Salt
  • 1 1/2 cup Brown Sugar
  • 4 Eggs
  • 1/4 cup Applesauce
  • 2 Ripe Mangoes (Cut into cubes)
  • 1/4 cup Mango Nectar or Mango Purée
  • 1 tsp Coconut Oil (For greasing)

Optional

  • 1 cup Chopped Walnuts

Vanilla Lime Glaze *Optional*

  • 1 Lime, juiced
  • 1 tsp Vanilla Extract
  • 1 cup Confectionary Sugar
  1. Preheat oven to 350°

  2. Use a small square piece of parchment paper to grease your loaf pan with coconut oil. Pay attention to the corners and edges, make sure you get them.

  3. Sprinkle flour, distribute and cover the entire interior of the pan. Set aside.

  4. Add flour, salt, baking soda, cinnamon, nutmeg, ground cloves, and ginger to large mixing bowl.

  5. Mix thoroughly. Make a well in the center of bowl.

  6. Add brown sugar, eggs, applesauce, mango nectar purée and mango cubes.

  7. Mix slowly the wet ingredients into the dry ingredients with a spatula.

  8. Pour into the loaf pan. Top with chopped walnuts.

  9. Place pan in the center of top rack in oven and bake for 55-60 minutes.

  10. Bread is ready when golden brown and after inserting a thin knife in center of loaf comes out clean.

  11. Use a plate or board and place on top of loaf pan. Flip over and lift pan to release loaf. Place loaf right-side up.

  12. Using a thin knife poke holes throughout loaf. Slowly pour glaze on top of bread while still

    warm. Let cool.



Vanilla Lime Glaze Directions

  1. Place lime juice, vanilla extract and sugar in a small bowl. Whisk until smooth.

Gluten Free Option

Please note that you may replace the flour with an all purpose gluten free flour.
