Coconut Banana Oatmeal Porridge Recipe

Tasty coconut banana oatmeal porridge recipe for the whole family to enjoy by Chef Ash Nicole, from Just Like Mamos. This recipe is nutritious, filling, and can be enjoyed for breakfast or as a snack.

INGREDIENTS

2 cups of Old Fashioned Oats
1 can of Light Coconut Milk
2 cups of Water
1 Banana 1 Small Green Apple
1/3 cup of Shredded Coconut 5 oz of Fresh Blueberries
1 Tbsp of Organic Coconut Oil 1 Tbsp of Light Brown Sugar 1 Tbsp of Organic Local Honey
2 Cinnamon Sticks
1 Tsp of Ground Nutmeg
1 Tsp of Kosher Salt
2 g Organic cocao nibs
2 Tsp of Vanilla Extract

DIRECTIONS

Place oats in a bowl to soak with 1 1⁄2 cups of cold water for 10-15 mins or until most of the water is absorbed.

In a deep pot, pour water, coconut milk, salt & cinnamon sticks. Bring to a boil.

In a separate small bowl, peel bananas, add vanilla extract and mash until smooth. Set aside.

Once water is boiled, add soaked oats, mashed banana and honey.

Turn flame on low. Simmer and stir occasionally until porridge is well blended.

Add more water if porridge gets too thick.

Peel and slice apple into 1⁄2 inch thick pieces.

In a small pan, add coconut oil, brown sugar and apple slices. Sautee’ until golden brown.

Serve porridge in a bowl, garnish with shredded coconut, blueberries, apple slices and cocoa nibs.
